This is a good idea - but I believe wiremock is a full fledged tool to do these kind of testing, and we might end up rebuilding wiremock if we were to get into more complex test setups.

One thing going for wiremock is that your tests not coupled to your framework (spring in this case)

Agree - it is only good idea for simpler (cuter) microservices only.
For complex services wiremock might be a good fit.
Plus this idea is across the border of integration and unit testing - kind of implementation Testing :-)
